  • 1 medium yellow onion, chopped
  • 2 large carrots , chopped
  • 1 cup chopped celery
  • 28 oz canned diced tomatoes
  • 60 oz vegetable broth, low-sodium
  • 3 medium potatoes, diced
  • 1 cup green beans, chopped
  • 3 bay leaves
  • 2 tsp salt, or to taste*
  • 1 tsp ground black pepper
  • 1 cup frozen sweet corn
  • 1 cup frozen sweet peas
  • 1/2 cup green onions, chopped
  • 1/4 cup fresh parsley, chopped

  • While the heavy soup pot or Dutch oven is heating up over medium heat, add two tablespoons of olive oil to the pot.
  • Onions and carrots that have been chopped should be sautéed for six to eight minutes, stirring occasionally, until they turn golden.

 

  • Celery, canned tomatoes (with juice), broth, potatoes, green beans, bay leaves, salt, and pepper should be added to the mixture to taste.
  • Bring it to a boil, then lower the heat to a simmer and continue cooking for another quarter of an hour.

  • Add corn, sweet peas, green onion, and parsley to the vegetables once they have reached the desired tenderness.
  • After adding salt to taste, continue to simmer for an additional five to eight minutes. Take the dish off the heat and serve it warm.

 

Notes

  • The amount of salt that you can use can change depending on the type that you are using.
  • Comparatively, a coarser salt might require one tablespoon, while table salt is closer to two teaspoons. Salt should always be added according to taste.
