  • Preheat the oven to a temperature of 400 degrees Fahrenheit.
  • Acorn squashes should have their tips and tails removed, then they should be cut in half and the insides should be scooped out.

  • To prepare the flesh, drizzle it with a small amount of oil and then sprinkle it with salt from the sea.
  • After placing the squash on a large baking sheet with the cut side down, bake it for fifty to sixty minutes, or until it is very tender when pierced with a fork.

  • During the time that the acorn squash is roasting, you should get the ground beef dressing ready.
  • Warm up a large skillet with one tablespoon of avocado oil and bring it to a medium temperature.

  • After about five to eight minutes, add the onion and continue to sauté it while stirring it occasionally until it becomes very soft.
  • The brussels sprouts and garlic should be added, then covered and cooked for four minutes while being stirred occasionally.

  • Arrange the vegetables in a separate section of the skillet, and then add the ground beef to the skillet.
  • After allowing it to brown for two to three minutes, incorporate it into the remaining skillet ingredients.

  • Cover the pot, add the remaining ingredients (oregano through kale), and continue cooking for approximately five minutes, or until the kale has wilted.
  • The acorn squash halves should be placed on plates, and then the desired amount of the beef stuffing mixture should be stuffed into them.
  • Have fun with your preferred side dish and serve it alongside.
