  • 2 acorn squash
  • 2 Tbsp avocado oil divided
  • 1/2 yellow onion diced*
  • 2 cups brussels sprouts sliced in half*
  • 3 cloves garlic minced*
  • 1 lb grass-fed ground beef
  • 1 Tbsp dried oregano
  • 2 tsp dried parsley
  • 1/2 tsp ground nutmeg
  • 1 tsp sea salt to taste
  • 1 small head kale chopped

  • Preheat the oven to a temperature of 400 degrees Fahrenheit.
  • Acorn squashes should have their tips and tails removed, then they should be cut in half and the insides should be scooped out.

 

  • To prepare the flesh, drizzle it with a small amount of oil and then sprinkle it with salt from the sea.
  • After placing the squash on a large baking sheet with the cut side down, bake it for fifty to sixty minutes, or until it is very tender when pierced with a fork.
