Besides being gluten-free and vegan, this black bean salad also features roasted sweet potatoes, fresh cilantro, and a basic spiced dressing. For a picnic, this salad is perfect.



  • 1 lb sweet potatoes
  • 1 small red onion
  • 3 tablespoons olive oil, divided
  • ¼ teaspoon salt
  • Juice and zest from 1 lime
  • 1 clove garlic, minced
  • ½ teaspoon chili powder
  • 1 cup cooked black beans, drained and rinsed if using canned
  • ½ cup cilantro
  • ¼ cup pepitas

  • Preheat the oven to 400 degrees Fahrenheit. After peeling the sweet potatoes, cut them into cubes measuring ¼ inch in size and arrange them on a sheet tray.
  • To add onion to the tray, chop it into pieces measuring ¼ inch in size. Add a quarter of a teaspoon of salt and drizzle one tablespoon of olive oil over the top.


  • Toss the sweet potatoes until they are completely covered.
  • It should take about 35 to 40 minutes for the sweet potatoes to become tender and begin to brown after being spread out in a single layer and roasted.


  • During the time that the sweet potatoes are roasting, combine the remaining two tablespoons of olive oil with the lime juice, one teaspoon of lime zest, minced garlic, and chilli powder in a jar. Give it a good shake.
  • After the sweet potatoes have finished cooking, place them in a bowl.


  • Black beans, pepitas, and cilantro should be added to the mixture. Drizzle the salad with the dressing, then toss it until everything is incorporated.
  • When the sweet potatoes are still warm, this is the absolute best time to do it.
