A sausage breakfast casserole topped with bell peppers, tomatoes, cheese, olives, and onion, all of which are traditional pizza toppings. This low-carb, high-protein breakfast recipe is an ideal way to begin the day.

  • Large Casserole Dish


  • 1 Tbsp avocado oil
  • 1 small red onion chopped
  • 3 large cloves garlic minced
  • 1 (12-oz.) package pre-cooked sausage of choice sliced*
  • 5 ounces baby spinach optional
  • 1 green bell pepper chopped
  • 1 (4-oz) can sliced black olives drained
  • 1 cup cherry tomatoes or 1 large vine ripened tomato, chopped
  • 16 ounces grated cheese of choice **
  • 12 large eggs well-beaten

  • A large skillet should be heated over medium-high heat, and then the chopped onion should be added to the avocado oil.
  • Sauté the onion for approximately five minutes, stirring it occasionally, until it begins to become more tender.


  • Continue cooking the sausage for approximately three to five minutes after adding the fresh minced garlic and sliced sausage links.
  • This should be done until the sausage begins to turn a golden brown colour.


  • The baby spinach should be added to the skillet, and it should be covered and cooked for two to three minutes, or until the spinach has wilted, whichever comes first.
  • Bake at a temperature of 350 degrees Fahrenheit. Spray a large casserole dish with cooking spray and give it a light coating.


  • I make use of a casserole dish that measures 13 inches by 9 inches.
  • The bell pepper, olives, and tomatoes should be transferred to the bottom of the large casserole dish that has been prepared for baking.


  • Combine everything by adding the onion sausage mixture and stirring it all together.
  • To ensure that the eggs are thoroughly beaten, crack them into a large bowl and whisk them thoroughly. One-half of the grated cheese should be mixed in.


  • After pouring the egg mixture that has been beaten into the casserole dish, use a spoon or a fork to stir the egg around until everything is in an even layer and it appears as though the ingredients are distributed evenly throughout the dish.
  • The remaining cheese should be sprinkled on top then.


  • Cook the egg bake on the middle rack of an oven that has been preheated for thirty-five to forty-five minutes, or until the edges of the egg bake have a golden brown colour.
  • Before cutting the cheesy sausage egg bake into slices and serving it, you should wait ten minutes for it to cool down.
  • You can serve it with any of your preferred toppings, such as additional grated cheese, sour cream (or Greek yoghurt), sliced avocado, and salsa.



  • There is a maximum of one pound of ground breakfast sausage that can be used, or you can choose your preferred pork or chicken sausage. Because it is high in protein and low in fat, chicken sausage is a favourite of mine. It is imperative that you fully cook the ground sausage before incorporating it into the casserole if you are using an uncooked brand of ground sausage.


  • The cheese that I use is colby jack, but you can use any melting cheese that you particularly enjoy. There are many excellent cheeses to choose from, including pepper jack cheese, gruyere cheese, mozzarella cheese, and cheddar cheese.
