Ingredients

  • 1 Tbsp avocado oil
  • 1 small red onion chopped
  • 3 large cloves garlic minced
  • 1 (12-oz.) package pre-cooked sausage of choice sliced*
  • 5 ounces baby spinach optional
  • 1 green bell pepper chopped
  • 1 (4-oz) can sliced black olives drained
  • 1 cup cherry tomatoes or 1 large vine ripened tomato, chopped
  • 16 ounces grated cheese of choice **
  • 12 large eggs well-beaten

  • A large skillet should be heated over medium-high heat, and then the chopped onion should be added to the avocado oil.
  • Sauté the onion for approximately five minutes, stirring it occasionally, until it begins to become more tender.

 

  • Continue cooking the sausage for approximately three to five minutes after adding the fresh minced garlic and sliced sausage links.
  • This should be done until the sausage begins to turn a golden brown colour.

  • The baby spinach should be added to the skillet, and it should be covered and cooked for two to three minutes, or until the spinach has wilted, whichever comes first.
  • Bake at a temperature of 350 degrees Fahrenheit. Spray a large casserole dish with cooking spray and give it a light coating.

 

  • I make use of a casserole dish that measures 13 inches by 9 inches.
  • The bell pepper, olives, and tomatoes should be transferred to the bottom of the large casserole dish that has been prepared for baking.

  • Combine everything by adding the onion sausage mixture and stirring it all together.

Notes

  • There is a maximum of one pound of ground breakfast sausage that can be used, or you can choose your preferred pork or chicken sausage. Because it is high in protein and low in fat, chicken sausage is a favourite of mine. It is imperative that you fully cook the ground sausage before incorporating it into the casserole if you are using an uncooked brand of ground sausage.

  • The cheese that I use is colby jack, but you can use any melting cheese that you particularly enjoy. There are many excellent cheeses to choose from, including pepper jack cheese, gruyere cheese, mozzarella cheese, and cheddar cheese.
