  • 2 pounds Yukon Gold or red potatoes, scrubbed and diced into 1-inch cubes
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons white wine vinegar
  • 1 teaspoon Dijon mustard
  • 2 cloves garlic, minced
  • 1/4 cup finely chopped fresh parsley
  • 1/4 cup finely chopped fresh basil
  • 2 tablespoons finely chopped fresh chives
  • Salt and freshly ground black pepper, to taste
  • 1/4 cup chopped red onion (optional)
  • 1/4 cup chopped pitted Kalamata olives (optional)
  • 1/4 cup diced roasted red bell peppers (optional)

  • Using a large pot, place the potatoes that have been diced and cover them with cold water. The water should have a generous amount of salt added to it.
  • After bringing the water to a boil over medium-high heat, reduce the heat to medium-low and continue to simmer the potatoes for approximately ten to fifteen minutes, or until they are tender when pierced with a fork.


  • Prepare the dressing while the potatoes are cooking in the pressure cooker. Olive oil, white wine vinegar, Dijon mustard, minced garlic, chopped parsley, chopped basil, and chopped chives should be mixed together in a small bowl using a whisk.
  • Depending on your preferences, season the dressing with salt and pepper.


  • After the potatoes have been cooked, make sure they are completely drained and then place them in a large mixing bowl.
