Instructions

  • Once the pits have been removed from the medjool dates, place them in a food processor along with the cocoa powder.
  • Processing (pulsing or blending) the dates and cocoa powder should result in the formation of small chunks of both ingredients for the recipe. It is possible that this will take a minute or two to finish.

  • Continue processing or blending the ingredients until they are completely combined and a thick, sticky mixture is produced.
  • This should be done after the addition of the melted coconut oil.

  • There is absolutely no cause for concern regarding the fact that there are still some small pieces of dates present in the mixture!
  • The date truffle mixture should be removed from the food processor and transferred to a bowl using a rubber spatula.

  • The bowl should then be placed there.
  • Do not serve until fifteen minutes have passed.

  • This allows the mixture to become slightly more viscous, which makes it much easier to manipulate.
  • As a result, the mixture can be thickened.

  • When you roll the mixture, you should be able to create between 14 and 18 truffle balls.
  • If you want to, you can also choose to roll each ball in cocoa powder, unsweetened shredded coconut, chopped walnuts, or chopped pecans.

  • All of these options are available to you.
  • Place the finished truffles on a plate or on a baking sheet that has been lined with parchment paper at each stage of the truffle making process.
  • This will ensure that the truffles are completely covered. These luxurious truffles are absolutely ready to be devoured at this very moment!

Notes

  • Even if you are only able to find deglet noor dates, they will still work; however, you will probably need to add more coconut oil to the recipe.
  • This is because deglet noor dates typically have less flesh than medjool dates, which means that they are slightly drier.
  • Because they are smaller than Medjool dates, you should measure them by weight, which is eight ounces, rather than by number.
