I adore coffee. It may be because I was allowed coffee early on. Before I could walk, early age. My mom loves telling how my grandmother dipped biscuits in coffee and I begged for more. It was probably before the coffee stunts growth saying became popular.




  • 1 cup all-purpose flour
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • 4 teaspoons instant espresso coffee or powder
  • 1 ½ teaspoons warm water
  • ½ cup plus 2 tablespoons granulated sugar
  • 5 tablespoons unsalted butter, room temperature
  • 1 large egg
  • ½ teaspoon vanilla extract
  • ¼ cup chocolate chips or chopped chocolate

Decadent coffee cookie recipe

  • To get started with this recipe, the oven should be preheated to 350 degrees Fahrenheit, and a large baking sheet should be lined with parchment paper.
  • Flour, baking soda, and salt should be mixed together in a medium bowl using a whisk, and then set aside.


  • The instant espresso powder and warm water should be mixed together in a small bowl and stirred repeatedly until the instant espresso powder is completely dissolved.
  • A stand mixer or a hand mixer set to a low speed should be used to thoroughly combine the sugar, butter, egg, and vanilla extract. Mix until everything is thoroughly combined.
  • While being careful not to overmix, add the coffee mixture and the flour mixture to the mixture and mix until they are combined.
  • After turning off the mixture, gently fold in the chocolate, and then spoon the cookie dough onto the cookie sheet that has been prepared, leaving at least an inch of space between each tablespoon of cookie dough.


  • Once the cookies have been placed in the oven, allow them to bake for ten to twelve minutes, or until the edges have become firm and the cookies have become soft and puffy.
  • Take the cookies out of the oven and let them cool for five minutes on the cookie sheet before removing them from the oven.


  • Serve the cookies either while they are still warm or after they have completely cooled down.
  • The cookies can be kept at room temperature for up to five days if they are stored in an airtight container.


To make the best coffee cookie, here are some tips:

  • Use chocolate chips that are semisweet or a portion of a chocolate bar that has been chopped. When you use the chopped chocolate, it will melt, which will result in the cookie having a chewy and fudgy texture.
  • When baking these cookies, take care not to overbake them. After being removed from the oven, they will have a soft texture, but as they cool, they will take on a chewy texture.
  • You should not be surprised if the cookie dough is soft; this is perfectly normal. If you find that the dough is too soft to scoop, simply place it in the refrigerator for a few minutes before scooping it out to bake.
  • You can also freeze these cookies and then bake them at a later time.
