  • 1 cup all-purpose flour
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • 4 teaspoons instant espresso coffee or powder
  • 1 ½ teaspoons warm water
  • ½ cup plus 2 tablespoons granulated sugar
  • 5 tablespoons unsalted butter, room temperature
  • 1 large egg
  • ½ teaspoon vanilla extract
  • ¼ cup chocolate chips or chopped chocolate

  • To get started with this recipe, the oven should be preheated to 350 degrees Fahrenheit, and a large baking sheet should be lined with parchment paper.
  • Flour, baking soda, and salt should be mixed together in a medium bowl using a whisk, and then set aside.

 

  • The instant espresso powder and warm water should be mixed together in a small bowl and stirred repeatedly until the instant espresso powder is completely dissolved.
  • A stand mixer or a hand mixer set to a low speed should be used to thoroughly combine the sugar, butter, egg, and vanilla extract. Mix until everything is thoroughly combined.
  • While being careful not to overmix, add the coffee mixture and the flour mixture to the mixture and mix until they are combined.
  • After turning off the mixture, gently fold in the chocolate, and then spoon the cookie dough onto the cookie sheet that has been prepared, leaving at least an inch of space between each tablespoon of cookie dough.
