Finally, berries are coming into season. It’s early, but I’m excited and have two containers of fresh blueberries in my fridge. Here come tarts. Their simplicity and beauty make them ideal for brightening up a Tuesday at home.

Ingredients

  • 2 1/2-3 cups fresh or frozen blueberries
  • 1-2 tablespoon cornstarch (see notes)
  • 1/4 cup honey or granulated sugar
  • 1 tablespoon lemon zest + 1 teaspoon lemon juice
  • 1 tablespoon fresh thyme leaves (or 2 teaspoons dried thyme)
  • 1 teaspoon vanilla extract
  • 1 sheet frozen puff pastry, thawed
  • 1 egg, beaten
  • coarse sugar, for sprinkling (optional)
  • vanilla ice cream, for serving (optional)

Instructions

  • Preheat the oven to a temperature of 400 degrees Fahrenheit.
  • Place parchment paper on a baking sheet and set it aside.

 

  • The blueberries and one tablespoon of cornstarch should be mixed together in a bowl of medium size.
  • Honey, lemon zest, lemon juice, thyme, and vanilla extract should be added together.

  • Roll out the puff pastry until it is a quarter of an inch thick on a surface that has been lightly dusted with flour.
  • Cut into four rectangles, and place each rectangle on the baking sheet that has been prepared.

 

  • Create an even layer of blueberries on each rectangle, leaving a border of half an inch along the edge.
  • With the blueberries on top, fold the edges up and over them.

  • A beaten egg should be used to brush the edges of the pastry, and then coarse sugar should be sprinkled on top.
  • Place in the oven and bake for twenty-five to twenty-five minutes, or until the top is golden brown.

Cornstarch: Because I enjoy a tart that is still runny, I prefer to use only one tablespoon of cornstarch. Make use of two tablespoons of cornstarch if you would like the berry filling to be more substantial.
