Some days require simple recipes like tarts. I like “no fuss” recipes lately. Maybe it’s all the time I spend in the kitchen, but anything complicated isn’t happening anymore.

  • Preheat the oven to a temperature of 400 degrees Fahrenheit.
  • Place parchment paper on a baking sheet and set it aside.

  • The blueberries and one tablespoon of cornstarch should be mixed together in a bowl of medium size.
  • Honey, lemon zest, lemon juice, thyme, and vanilla extract should be added together.

  • Roll out the puff pastry until it is a quarter of an inch thick on a surface that has been lightly dusted with flour.
  • Cut into four rectangles, and place each rectangle on the baking sheet that has been prepared.

  • Create an even layer of blueberries on each rectangle, leaving a border of half an inch along the edge.
  • With the blueberries on top, fold the edges up and over them.

  • A beaten egg should be used to brush the edges of the pastry, and then coarse sugar should be sprinkled on top.
  • Place in the oven and bake for twenty-five to twenty-five minutes, or until the top is golden brown.

  • It does not matter if the edges become dark.
  • After allowing it to slightly cool, serve it with ice cream. Have fun!

Cornstarch: Because I enjoy a tart that is still runny, I prefer to use only one tablespoon of cornstarch. Make use of two tablespoons of cornstarch if you would like the berry filling to be more substantial.
