Ingredients

  • 2 cups (250g) all-purpose flour (spooned & leveled)
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup (8 Tbsp; 113g) unsalted butter, softened to room temperature
  • 3/4 cup (150g) packed light or dark brown sugar
  • 2 large eggs, at room temperature
  • 1/3 cup (80g) plain yogurt or sour cream, at room temperature
  • 2 cups (460g) mashed bananas (about 4 large ripe bananas)
  • 1 teaspoon pure vanilla extract
  • optional: 3/4 cup (100g) chopped pecans or walnuts

Instructions

  1. Place the rack in the lower third of the oven, and then preheat the oven to 350 degrees Fahrenheit (177 degrees Celsius). It is possible to prevent the top of your bread from browning too quickly and excessively by lowering the rack in the oven. Spray nonstick spray on a metal loaf pan measuring 9 inches by 5 inches. Put aside for later.
  2. The flour, baking soda, salt, and cinnamon should be mixed together in a medium bowl using a whisk. Put aside for later.
  3. While using a stand mixer or a handheld mixer that is equipped with a paddle or whisk attachment, combine the butter and brown sugar and beat them together on high speed for approximately two minutes, until the mixture is smooth and creamy.
  4. Add the eggs one at a time while the mixer is operating at a medium speed, and make sure to give it a thorough beating after each addition. The yogurt, mashed bananas, and vanilla extract should then be beaten in until they are completely combined.
  5. While the mixer is operating at a low speed, gradually incorporate the dry ingredients into the wet ingredients until there are no pockets of flour left.
  6. Take care not to overmix. Mix in the nuts, if you are using them.
  7. Once the baking pan has been prepared, pour the batter into it and spread it out. In order to prevent the top of the bread from becoming overly brown, bake it for sixty to sixty-five minutes, making sure to cover it loosely with aluminum foil halfway through the baking process.
  8. Once a toothpick is inserted into the center of the bread and it comes out clean with only a few small moist crumbs, the bread is ready to be served. It is possible that this will occur after sixty to sixty-five minutes for your oven, so you should start checking it every five minutes around the sixty-minute mark.
  9. After taking the bread out of the oven, let it cool for one hour in the pan that has been placed on a wire rack inside the oven. The bread should be removed from the pan and allowed to cool directly on the wire rack until it is ready to be sliced and served.
  10. The banana bread can be stored at room temperature for two days. Alternatively, it can be stored in the refrigerator for up to one week. What size low pans do you put it in and how many I have a banana recipe and I only use a 9 x 5 for my banana bread recipe and it comes out perfect which is one cup of bananas, three small bananas, one and a quarter cup flour and I’m not gonna give you the rest of the recipe and less you let me know what your bread recipe goes in what pan size and if you have to grease the pan and how long to cook it it sounds good but it sounds like you’re feeding an army please reply to my email.
