Three milks is what “tres leches” means. The pancakes in this recipe are extremely light and fluffy, and they are topped with a tres leches syrup that is both creamy and sweet. This syrup is absolutely perfect for drizzling over your pancakes for the perfect bite. Include some candied walnuts for an additional crunch in your dish.

Ingredients
- 2 cups all-purpose flour
- 3 teaspoon baking powder
- ¼ teaspoon salt
- 1-2 tablespoon granulated sugar (optional)
- 1½ cups milk or alternative milk (can add up to ¼ cup more milk if batter is too thick or continues to thicken as you are cooking) see notes for alternative milk options
- 2 eggs (if you omit, increase milk by 3 tablespoons) can also substitute flax egg
- 2 tablespoon 2 tablespoons oil or butter in pancake batter (optional). If you omit this ingredient you can add slightly more milk.
- 2 tablespoon Oil or butter to cook pancakes in pan.
- 14 oz can sweetened condensed milk
- 12 oz can evaporated milk
- 1 cup heavy whipping cream
- 4 tablespoon dulce de leche or caramel drizzle
- ¼ teaspoon cinnamon
- ½ cup whipped cream

Instructions
- The wet ingredients and the dry ingredients should be mixed together in separate bowls.
- Ingredients, both wet and dry, should be combined and thoroughly mixed.
- Adjust the temperature of your pan, griddle, or skillet to medium-high.
- To make pancakes, pour the mixture into the pan, using approximately half a cup for each pancake.
- Prepare each pancake by turning it over halfway through the cooking process.
- Make your preferred pancake mix from a box: this is the option you have. Refer to the instructions on the box.
- As you bring the mixture to a boil, make sure to stir it frequently.
- Boil for two to three minutes to thicken, stirring constantly throughout the process.
- Drizzle over pancakes, and savour the result!
- Additional drizzles of caramel or dulce de leche, a sprinkle of cinnamon, and/or whipped cream can be added on top.
Notes
- You don’t have to make your pancakes from scratch if you want to. You can use your favourite boxed pancake mix instead.
- Sugar (Leaving Out or Adding): You can leave out the sugar in the recipe. You can also use brown sugar, cane sugar, or your favourite sugar substitute (watch the video to learn how to convert the amounts based on the brand or type of sugar substitute you choose).
- You can get whole milk, 2% milk, or fat-free milk.
- You can choose soy milk, almond milk, coconut milk, pea milk, or oat milk instead of dairy milk.
- Flax Egg: Mix three tablespoons of water with one tablespoon of flaxseed meal to make a flax egg. Put it in the fridge for about 10 minutes to thicken.
- For vegan and dairy-free pancakes, leave out the egg and use flax egg instead.
- You can choose from different milks. I used coconut-based vegan sweetened condensed milk, coconut-based vegan evaporated milk, and an alternative “heavy” milk for the tres leches syrup.
