Instructions
- For the purpose of removing the pits from the dates, use a paring knife to cut them open lengthwise.
- It is important to note that even if you purchased dates that already had pits removed, you will still need to slice the dates open in order to make room for the almond butter during the preparation process.
- Dates that have been sliced and pitted should be placed on a small baking sheet, plate, or platter.
- For the purpose of stuffing dates with one to two teaspoons of almond butter, you can use a butter knife or a small spoon.
- The amount of almond butter that you use is determined by the size of your dates as well as the amount of almond butter that you want to stuff inside of them respectively.
- It is not necessary for this to be an exact science, so feel free to follow your instincts here.
- It is recommended to press chopped pecans onto the tops of the almond butter.
- Note that you can also put the chopped nuts into the cavity of the dates before adding the almond butter. This is an additional option.
- After transferring the chocolate chips and coconut oil to a bowl that is safe for use in the microwave, microwave them for 20-second intervals until they melt, making sure to stir them thoroughly between each interval.
- This should take approximately 60 seconds.
- Over the dates that have been stuffed, drizzle some melted chocolate.
- You have the option of coating the entire date in chocolate or even just drizzling it on. Both approaches are appealing to me.
- During the time that the chocolate is still melted, you can choose to sprinkle flaky sea salt over the dates if you please.
- Place the plate or sheet pan in the refrigerator and chill it for approximately half an hour to an hour, or until the chocolate has hardened.
Notes
- There is also the option of using deglet noor dates; however, working with them will be slightly more challenging due to the fact that they are smaller and have less space present on the inside.
- The quantity of almond butter that you will require is determined by the size of the dates as well as the precise amount of almond butter that you intend to stuff into the dates.
- Depending on the size of the date, it is possible for each date to accommodate approximately one to two teaspoons of almond butter.
- Walnuts or peanuts in their raw form
