- 6 ounce chicken breast ((1 breast) skinless boneless, cut small pieces)
- 2 links Italian sausage (cut in 1 inch pieces)
- 1 small onion (chopped)
- 1/2 medium bell pepper (chopped)
- 3 cloves garlic (minced)
- 28 ounces diced tomatoes ((1 can) juice included)
- 2 green onions (chopped)
- 4 sprigs cilantro (or parsley, chopped)
- 1 cup chicken broth (low sodium)
- 8 ounces penne (uncooked)
- 1/2 teaspoon chili powder (mild)
- 1 tablespoon olive oil
- 1/2 teaspoon salt (or to taste)
- 1/2 teaspoon pepper (or to taste)
- 1 tablespoon hot sauce
Directions
Step 1
Warm the oil in a big skillet by placing it over a medium heat. fry the onion and peppers until they are tender, then add the sausages and continue to fry until they are browned. Cook the garlic for one minute, or until it becomes aromatic, and then add the chicken. After coating the chicken with Cajun seasoning, salt, and pepper, fry it while tossing it frequently until it is golden brown and cooked all the way through.
Step 2
After stirring in the penne, add in the diced tomatoes and followed by the chicken broth. It should take around twenty minutes for the pasta to become al dente and virtually all of the liquid to be absorbed.
Step 3
Stir in heavy cream and cheddar until melty.
Step 4
Serve with Parmesan and parsley.
