- 1/2 yellow onion diced*
- 2 cups brussels sprouts sliced in half*
- 3 cloves garlic minced*
- 1 lb grass-fed ground beef
- 1 Tbsp dried oregano
- 2 tsp dried parsley
- 1/2 tsp ground nutmeg
- 1 tsp sea salt to taste
- 1 small head kale chopped

- Preheat the oven to a temperature of 400 degrees Fahrenheit.
- Acorn squashes should have their tips and tails removed, then they should be cut in half and the insides should be scooped out.
- To prepare the flesh, drizzle it with a small amount of oil and then sprinkle it with salt from the sea.
- After placing the squash on a large baking sheet with the cut side down, bake it for fifty to sixty minutes, or until it is very tender when pierced with a fork.
