Ingredients

For the Roasted Cranberries

  • 1-½ cups fresh or frozen cranberries
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon orange zest
  • ¼ cup fresh-squeezed orange juice

  • 1/8 teaspoon ground cinnamon

  • ¼ cup honey

  • 2 medium sweet potatoes
  • 1 tablespoon olive oil
  • Sea salt
  • 5 ounces goat cheese
  • roasted almonds

Prepare the Balsamic Roasted Cranberries:

  • Preheat the oven or oven to a temperature of 425 degrees Fahrenheit.
  • A small bowl should be used to combine the balsamic vinegar, orange zest, orange juice, olive oil, sea salt, and cinnamon. Whisk all of these ingredients together.

 

  • A small casserole dish should be used to place the cranberries, then the balsamic mixture should be poured over the cranberries and stirred to combine.
  • Cover with aluminium foil and bake for fifteen minutes, or until no longer firm. Take the foil off, add the honey, and give it a good stir.
