Easy Pumpkin Chili Recipe- Learn Like a Pro:-I love pumpkin everything. I love almost every chilli recipe (see my Homemade Chilli and its variations). Pairing my two autumn loves was only fitting. Pumpkin adds nutrients to chilli without altering its flavour. The flavour and texture lighten classic chilli, so I’m in!

Chilli made with pumpkin is not only filling but also light, and it is loaded with fibre and other nutrients. This bowl of autumn flavours is the ideal combination of warmth and cosiness.

EQUIPMENT

  • Dutch Oven
  • White Cutting Boards
  • Chef’s Knife
  • Measuring Cups Spoons

INGREDIENTS

Chili

  • 2 cloves garlic
  • 1 yellow onion
  • 2 Tbsp olive oil
  • 1 lb. ground beef
  • 1 15oz. can kidney beans, drained
  • 1 15oz. can black beans, drained
  • 1 15oz. can petite diced tomatoes
  • 1 15oz. can pumpkin purée
  • 1/2 6oz. can tomato paste (5 Tbsp)
  • 2 cups water

Chili Seasoning*

  • 1 Tbsp chili powder
  • 1/2 tsp smoked paprika
  • 1 tsp ground cumin
  • 1/4 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp freshly cracked black pepper
  • 1 tsp salt

INSTRUCTIONS 

  • Both the garlic and the onion should be minced. Place the garlic, onion, and olive oil in a large pot and stir to combine.
  • In a skillet set over medium heat, sauté the onion and garlic until the onions are tender, which should take about five minutes.

  • After adding the ground beef, continue to cook the meat until it has developed a browned appearance and is fully cooked.
  • In a pot, combine the following ingredients: kidney beans (drained), black beans (drained), diced tomatoes (with their juices), puréed pumpkin, tomato paste, water, chilli powder, smoked paprika, cumin, garlic powder, onion powder, pepper, and salt. In order to combine, stir.

 

  • The chilli should be allowed to come to a simmer while being stirred occasionally.
  • The lid should be placed on top of the pot then. For thirty minutes, the chilli should be allowed to simmer.

  • Give the chilli a taste after it has been simmering for thirty minutes, and if necessary, add salt to it.
  • The dish should be served hot with the toppings of your choice, such as sour cream, cheese, green onion, corn chips and so on.

 

NOTES

  • You have the option of using chilli seasoning that you have purchased from a store or your preferred combination of chilli herbs and spices.
