Autumn baking may be the best. It may be the most relaxing weekend activity. I can’t think of anything better to do on a rainy fall day. You concur? Warm cinnamon, sweet apples, and vanilla are the best scents. One of my favorites.

I hope you guys enjoy weekend baking as summer turns to fall. Many of you in the US are experiencing cooler temperatures, as my parents are in Tahoe with my brother Red, where it snowed! However, October will bring cold weather. I’ll share the best autumn savory and sweet recipes.

Ingredients

  • 1/2 cup maple syrup
  • 3 tablespoons salted butter
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon all-spice
  • 1/4 teaspoon freshly grated nutmeg
  • 1/8 teaspoon ground black pepper
  • 1 teaspoon vanilla extract
  • 1 pinch flaky sea salt
  • 1 sheet frozen puff pastry, thawed
  • 1/2 cup whole milk ricotta cheese
  • 4-5 Honeycrisp apples, halved, cored, and thinly sliced
  • coarse sugar, for sprinkling
  • vanilla ice cream, for serving

Instructions

  • Preheat the oven to a temperature of 400 degrees Fahrenheit.
  • Take a small saucepan and place it over high heat.

 

  • Add the maple syrup, butter, cinnamon, ginger, cardamom, all-spice, nutmeg, and pepper.
  • Bring the mixture to a boil, then reduce the heat to a simmer for two minutes.

  • Remove from the heat source. Vanilla extract and a dash of salt should be stirred in.
  • The puff pastry should be rolled out into a rectangle with a thickness of about one quarter of an inch on a surface that has been lightly dusted with flour.

 

  • The pastry should be placed on a baking sheet that has been lined with parchment paper, and the ricotta should be spread over the pastry in an even layer, leaving a border of one inch.
  • To prepare the ricotta, drizzle it with approximately two tablespoons of the spiced maple.

  • The apples should be arranged on top of the ricotta with the skin side facing up.
  • The apples should be brushed or drizzled with two to three tablespoons of the spiced maple syrup.

 

  • Place the apples on top of the pastry and fold the edges of the pastry up.
  • Now, brush the edges of the pastry with a small amount of the spiced maple, and then sprinkle it with sugar.

  • Set aside any spiced maple that is left over for serving.
  • Place in the oven and bake for 25 to 35 minutes, or until the colour of the cake is golden brown.

 

  • There is no problem with the edges becoming dark, and they will become dark.
  • After it has had some time to cool down, serve it with ice cream and additional chai spiced maple syrup. Have fun!
