  • 2 1/2-3 cups fresh or frozen blueberries
  • 1-2 tablespoon cornstarch (see notes)
  • 1/4 cup honey or granulated sugar
  • 1 tablespoon lemon zest + 1 teaspoon lemon juice
  • 1 tablespoon fresh thyme leaves (or 2 teaspoons dried thyme)
  • 1 teaspoon vanilla extract
  • 1 sheet frozen puff pastry, thawed
  • 1 egg, beaten
  • coarse sugar, for sprinkling (optional)
  • vanilla ice cream, for serving (optional)

  • Preheat the oven to a temperature of 400 degrees Fahrenheit.
  • Place parchment paper on a baking sheet and set it aside.

 

  • The blueberries and one tablespoon of cornstarch should be mixed together in a bowl of medium size.
  • Honey, lemon zest, lemon juice, thyme, and vanilla extract should be added together.

  • Roll out the puff pastry until it is a quarter of an inch thick on a surface that has been lightly dusted with flour.
  • Cut into four rectangles, and place each rectangle on the baking sheet that has been prepared.

 

  • Create an even layer of blueberries on each rectangle, leaving a border of half an inch along the edge.
  • With the blueberries on top, fold the edges up and over them.

Cornstarch: Because I enjoy a tart that is still runny, I prefer to use only one tablespoon of cornstarch. Make use of two tablespoons of cornstarch if you would like the berry filling to be more substantial.
