Instructions

  • I need to make the jam. The blackberries, honey, lemon juice, and lavender should be added to a pot of medium size that is brought to a high temperature.
  • The mixture should be brought to a boil. After they have reached a boil, the berries should be broken down and mashed using a potato masher or a fork.

  • Keep cooking for another five to eight minutes, or until the jam has reduced in volume and thickened by one-third. Take it off the heat and allow it to cool down. This ought to become more viscous as it cools down.
  • Put parchment paper in a pan that is 9 inches by 13 inches. Make sure the ice cream and jam are thoroughly mixed and swirled together in a bowl.

  • Be careful not to overmix; you want swirls. Spread the ice cream in an even layer, cover it, and place it in the freezer for at least two hours, or until it becomes firm.
  • Preheat the oven to 350 degrees Fahrenheit. Butter, honey, and vanilla extract should be creamed together in a bowl until they are completely combined, which should take about three to five minutes.

  • Mix in the baking soda, cinnamon, and salt along with the flour. Continue beating until everything is incorporated. Add the white chocolate to the mixture.
  • As you continue to add water, do so in increments of one tablespoon until the dough comes together and forms a ball.

  • Split the dough in half lengthwise. Applying flour to two pieces of wax paper, roll out one disc of dough to a thickness of approximately one quarter of an inch.
  • Make 24 squares, each measuring approximately 2 inches by 2 inches. Place the cookies on a baking sheet that has been lined with parchment paper.

  • Use the remaining disc of dough to repeat the process.
  • After the lavender and sugar have been combined, the lavender sugar should be sprinkled over the cookies in a very light manner. 10–12 minutes in the oven.

  • Following the removal of the slab of ice cream from the freezer, cut it into twelve squares. Place the ice cream in between the cookies and sandwich it. Freeze the food. Have fun!
