5-Ingredient Healthy Sweet Potato Oatmeal Cookies Recipe: Cookies made with sweet potato oatmeal and only five ingredients, which are simple to prepare and only require one bowl and a few healthy ingredients. These sweet potato cookies, which do not contain any flour, are a delicious and satisfying treat that you can indulge in on a daily basis. To satisfy my craving for sweets without going overboard, I have recently discovered a straightforward solution in the form of these sweet potato oatmeal cookies.

With all of the health-conscious ingredients that go into their creation, they are a treat that I can truly feel good about. I absolutely adore incorporating cooked sweet potatoes into my baked goods, as evidenced by the fact that I have made Healthy Double Chocolate Sweet Potato Muffins, Healthy Sweet Potato Brownies, and my Healthy Sweet Potato Chocolate Cake.

Sweet potatoes that have been mashed not only add natural sweetness, moisture, and volume to a dish, but they also reduce the amount of sugar and fat that is required. Moreover, sweet potatoes are an excellent source of potassium, vitamin A, antioxidants, and other health benefits, making them an excellent ingredient for a cookie recipe that is high in nutrition.

5-Ingredient Healthy Sweet Potato Oatmeal Cookies Recipe

These sweet potato cookies are made with five fundamental components: sweet potato that has been cooked and mashed, almond butter that has not been sweetened, oats, pure maple syrup, and ground cinnamon. To begin, the five items listed above are all that is required; however, as you will see in the following section, there are a great deal of additional goodies that can be included.

My 5-Ingredient Peanut Butter Oatmeal Chocolate Chip Cookies served as inspiration for this sweet potato version, which is lower in both sugar and fat than the original. The consistency of these cookies is not at all like that of regular cookies; rather, they have a texture that is chewy and quite soft. Consider them to be a healthy alternative to traditional sweet potato breakfast cookies.

Instructions

  • Cook the sweet potato in the manner that you prefer (for instructions on how to cook, see the post that was just above this one). Bake at a temperature of 350 degrees Fahrenheit.
  • Using parchment paper, line a large baking sheet with the material. Allow the potato to reach room temperature before proceeding. By putting it in the refrigerator to cool down, you can make this process go more quickly.

  • Once the sweet potato has reached a temperature that allows it to be handled, use a fork or a potato masher to mash it, and then measure out half a cup.
  • After the sweet potato has been mashed, transfer it to a large bowl and add the almond butter, pure maple syrup, and vanilla extract (if you are using it). In order to ensure that the wet ingredients are thoroughly combined, mix them together.

  • Oats, cinnamon, and salt are the dry ingredients that should be added to the mixing bowl. Mix the ingredients together until a thick and sticky cookie dough is formed. The consistency of the dough will be significantly more sticky than that of regular cookie dough.
  • This is a typical occurrence. When you are ready, you can add chocolate chips to the mixture.
Place mounds of cookie dough onto the baking sheet that has been lined with parchment paper.

  • It is important to keep in mind that the dough will not spread or change shape while it is being baked; therefore, you should shape it into discs using your hands or press dough balls with the back of a large spoon.
  • There are nine cookies that I make out of the dough, but you are free to make cookies of any size you desire. Be aware that the amount of time required to cook the dough can change depending on the size of the dough mounds.

  • In an oven that has been preheated, place cookies on the middle rack and bake them for ten to twelve minutes, or until the edges of the cookies have a golden brown color.
  • The cookies should be removed from the oven and allowed to cool for a minimum of ten minutes before being removed from the cookie sheet. Have fun!
